Pink Chocolate Chip Pancakes

I asked my niece what kind of pancakes she wanted and she replied "PINK" so pink it was. Kids are fun aren't they?

Ugh Sorry I am slacking on keeping my blog updated. I shall blame my camera for STILL being in the repair shop. I've been going running up the canyon lately, But not having a camera to taker pics of all the beautiful things sucks!
Zoe got a new car seat! This pic was hard to take in my car, it's a 2 door.

Taco Salad

I thought I would share how I make my taco salad

Taco meat (I like to make mine with tomatoes and green chilies)

Hint of Lime chips

Romaine Lettuce

Corn

Black beans

Tomatoes

Cheese

Avocados

Top with:

Sour cream

Herndez salsa

and Ranch dressing!

Pistachio Cake

2 cups all-purpose flour
1 1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup butter
1 cup milk
1 teaspoon vanilla extract
2 eggs

1 box pistachio pudding

add a few strawberries and some green food coloring for fun

Grease and flour two 8-inch cake pans.
Bake at 350 degrees F for about 30 - 35 min.

Happy birthday Zoe!

Zoe's first birthday was yesterday! I can't believe how fast this year has gone, even with Chris deployed for 10 months of it. He always told me it would go fast. Looks like he was right.

Natalie was supposed to help me decorate Zoe's birthday cake, but she was busy with work and drill. So this was my final outcome! This is my first attempt and doing fondant. I think I did pretty well.
