Hawaiian Haystacks
So my mother in-law had never heard of Hawaiian haystacks. I thought i would share the recipe for all of you. It is actually quiet simple. I prefer to make mine with Jasmine rice cooked in coconut water, but you can use any kind of rice you would like.
You will need:
Cooked rice
Chow mein noodles
Pineapple tidbits
Coconut
Chopped green onions
Diced tomatoes
Cooked chicken, cut into bite size pieces
Grated Cheddar cheese

Gravy (I usually make a gravy from chicken broth, all I do is add a little flour and some seasoning to the broth to make it.)
Some people like to add water chestnuts, almonds, bell peppers, pimentos, celery, etc. This is the way I like mine though.
First you put the rice on your plate, then add the chicken, cover with the gravy and cheese, then top it with any or all of the above ingredients.
