Canyon Run
I have been going running up the canyon just about every day lately. I love it because it's so beautiful and calming. Lots of things to see up there. I wish I had my camera back. But for now I will have to settle for the camera on my phone. How lucky am I to live in such a great place. All these pictures were taken with my Pentax camera (before it broke) except for the last one in the river. It started to rain on our run. I love the rain! So we had some fun.

New carseat
Ugh Sorry I am slacking on keeping my blog updated. I shall blame my camera for STILL being in the repair shop. I've been going running up the canyon lately, But not having a camera to taker pics of all the beautiful things sucks!

Pistachio Cake
2 cups all-purpose flour
1 1/4 cup sugar
1 tablespoon baking powder
1 teaspoon salt
1/2 cup butter
1 cup milk
1 teaspoon vanilla extract
2 eggs

1 box pistachio pudding
add a few strawberries and some green food coloring for fun
Grease and flour two 8-inch cake pans.
Bake at 350 degrees F for about 30 - 35 min.

Happy birthday Zoe!
Zoe's first birthday was yesterday! I can't believe how fast this year has gone, even with Chris deployed for 10 months of it. He always told me it would go fast. Looks like he was right.
Natalie was supposed to help me decorate Zoe's birthday cake, but she was busy with work and drill. So this was my final outcome! This is my first attempt and doing fondant. I think I did pretty well.

Hawaiian Haystacks
So my mother in-law had never heard of Hawaiian haystacks. I thought i would share the recipe for all of you. It is actually quiet simple. I prefer to make mine with Jasmine rice cooked in coconut water, but you can use any kind of rice you would like.
You will need:
Cooked rice
Chow mein noodles
Pineapple tidbits
Coconut
Chopped green onions
Diced tomatoes
Cooked chicken, cut into bite size pieces
Grated Cheddar cheese

Gravy (I usually make a gravy from chicken broth, all I do is add a little flour and some seasoning to the broth to make it.)
Some people like to add water chestnuts, almonds, bell peppers, pimentos, celery, etc. This is the way I like mine though.
First you put the rice on your plate, then add the chicken, cover with the gravy and cheese, then top it with any or all of the above ingredients.
